Or an any time hors d’oeuvres for that matter. This is one of my absolute favorites: toasted sweet potato with avocado. It’s healthy, delicious, and so freakin’ easy! All you need to do is get yourself an avocado, a sweet potato, a lemon and some garlic salt. This will make you about 4-5 crisps, so multiply ingredients by however many you want to serve (1-2 crisps per guest).
Cut the ends off a sweet potato and slice it lengthwise. Toast the slices in a toaster oven until they begin to darken. Cut your avocado in half and then cut slivers out of each half. Spread the avocado slivers across the toasted sweet potato slices. Sprinkle with a pinch of garlic salt. They’ll be delicious as they are, but if you wish, squeeze some fresh lemon juice over them which will help keep the avocado from turning brown.
